Eggs are a favorite food in our house-fast, versatile, and so healthy. If we are late home, we know we can have scrambled eggs or eggs over easy with toast in a hurry. When we have a little more time, though there are some fantastic egg dishes out there, like these:
Super Simple Use-What-You-Have Egg Dish
Eggs – however many needed to suit your crowd
Whatever else you might have on hand: any type of meat, herbs, potatoes or hash browns, vegetables, cheese, etc. (We have always pre-cooked the meat, potatoes, and any firm veggies like carrots)
Throw them all in a greased casserole dish and bake until eggs are done. mmmm.
Super Healthy Mini Quiche
Brown rice, about 2 cups cooked
Vegetables of your choice, diced
Meat of your choice, diced, optional
Mix brown rice with an egg or two to make a paste, then form this mixture into miniature crusts in the bottom of muffin pan cavities. Bake at 350 for just a few minutes – long enough to get crusty, not long enough to get burned.
Meanwhile, mix up your other ingredients. Pour mixture into the little crusts, and bake again until eggs are cooked thoroughly.
We like to keep these in the fridge during the week – they are very portable and make a great quick breakfast for the kids and I or Breakfast-In-The-Lunchbox for the husband.
