What can you do with herbs? What can’t you do with herbs?

Many herbs make great teas – plop fresh or dried leaves into a cup of hot water and let steam. (mint, lemon balm, bee balm, fennel)

Many herbs are good for syrups (sweet flavored basils, lavender, mint, lemon balm, sage, thyme):

Boil 1 c sugar and 3/4 c water until sugar is dissolved. Add herbs, remove pan from heat, and let steep 30 minutes. Pour through a sieve, press out the herbs, and store syrup in a covered jar in the refrigerator.

Try an herb-infused olive oil with dried herbs.

Homemade Mustard –add a favorite herb to this and see how mustard is a great carrier for herby goodness.
